From Yarrow- (I needed a place to put this recipe so i could refer to it in the future)
for the crust:
preheat your oven to 375. grease 2 muffin burrows or spray with cooking spray
you will need:
-around 4 dates
-1 1/2 tablespoons of raw buckwheat flour (i grind raw groats in a coffee maker, but you could use any kind of flour if you’re not going for gluten free or don’t care for buckwheat. i just like the taste of it and the nutrition)
-1 tablespoon flaxmeal
-about 2 tablespoons of rolled oats
-1/2 teaspoon vanilla extract
-a shy 2 tablespoons unsweetened applesauce
-cinnamon to taste (i probably used around 1/4 teaspoon or so)
-sweetener to taste (i think i used maybe 1/8 teaspoon of stevia but you might want a little more or to just use sugar)
-1/8 teaspoon baking soda
soften the dates by covering with water and microwaving for about 2-3 minutes. drain the water and throw them in the blender/food processor with everything except the baking soda. blend on low until combined, scraping the sides as needed. if you’re having a hard time getting it all to combine, add a teeny bit of water or a little more apple sauce. you don’t want it too mushy, though. just kind of like a messy dough. scrape it all out into a bowl or dish and mix in the baking soda. if it’s too gooey, add a little more flour or flax meal. take half the dough goo and mush it into one of the muffin things and up the sides being careful not to tear it. you want to keep it around 1/4 inch thick. do the same with the other half. bake it for about 8-10 minutes until it’s just starting to brown. it can still look a little soft. cool while you make your filling.
for the filling i just made my key lime avocado pudding, but added a teaspoon of flaxmeal, and 2 teaspoons of unsweetened coconut flakes. this made it a little thicker, but i’m going to work on another variety for something with a little more backbone. this was still more like pudding than pie filling. delicious, but a little wimpy.
fill up your baby pie crusts and fix those bad boys up however you like. i put a teaspoon of my banana cashew cream on mine with a little more coconut and had a few strawberry slices on the side. there was more pudding left over, too since these guys were so itty bitty. i may or may not have eaten the rest of it right out of the blender.
